This is an excerpt from Chicago restaurant industry veteran Ken McGarrie’s new book, The Surprise Restaurant Manager, which aims to help solve a common, but rarely addressed problem in the industry. All too often hospitality professionals are thrown into management positions with little to no training, the expectation from ownership being that their past experiences would prepare them for this new role.
Counting, managing and successfully maintaining your bar inventory seems simple at first glance, yet many bars are using time-consuming, ineffective and inaccurate processes that lead to hidden costs and lost profits.
Technology has shaped the way that restaurants do business, especially following the COVID-19 outbreak. Despite many limitations in how and when customers were able to be served, technology made this easier by establishing accommodations that might not have already been in place, such as online ordering, curbside pickup and delivery. However, technology was already beginning to cause a cultural shift within the restaurant industry prior to the COVID-19 outbreak.

In 2019, the hospitality industry found it exceedingly difficult to staff our properties. We blamed the extraordinarily low unemployment rate of 3.6 percent. Employees could pick and choose because there were far more jobs available than people to fill them. COVID-19 hit and then, because we had to close our properties or suddenly utilize only 25 percent of the space, we had more staff than we could use.
This appears to be one of those times of reflection – a time when those hard working people in kitchens around the country are asking a simple question: “Why am I doing this?” The pandemic is not the cause of this period of questioning – it simply brought it to the forefront. Everyone that I know in this business has asked that question a few times in their life, and rightfully so.

Go sit in your restaurant for an hour with your eyes closed and just listen. What do you hear?
